Coconut Protein Balls

Ingredients:

  • 2 cups (180g) rolled oats
  • ½ cup (70g) unsweetened shredded coconut, plus extra for rolling
  • 1 cup (250g) almond butter (or any nut butter of your choice)
  • ¼ cup (60ml) honey or maple syrup
  • ⅓ cup (40g) chia seeds
  • ¼ cup (50g) mini chocolate chips (optional)
  • 1 tsp (5ml) vanilla extract
  • 1 pinch sea salt

Instructions:

  1. In a mixing bowl, combine the rolled oats, shredded coconut, almond butter, honey/maple syrup, chia seeds, vanilla extract, and a pinch of sea salt. Mix thoroughly until all ingredients are evenly combined. If using, fold in the mini chocolate chips.
  2. Cover the bowl and place it in the refrigerator for about 30 minutes to let the mixture firm up.
  3. After 30 minutes, remove the bowl from the refrigerator. Prepare a plate or tray lined with parchment paper for the finished protein balls.
  4. Using a tablespoon or small ice cream scoop, scoop out a portion of the mixture then roll it into a ball using your hands. Continue to create balls until all of the mixture is used.
  5. Once all balls are formed, roll the balls in the extra shredded coconut to coat the surface. Place each ball on the parchment paper-lined plate or tray.
  6. Refrigerate the protein balls in an airtight container for at least 2 hours before serving. This helps them achieve the perfect texture and firmness.
